healthy holiday recipes inside!
Hi friends!! The festive season is here, and one of my favorite ways to celebrate is by creating nourishing and delicious holiday treats to share with loved ones. This week, I wanted to share some of my favorite healthy, easy-to-make holiday recipes that are perfect for gatherings or cozy nights in :)
Paleo Peppermint Brownies
Ingredients:
1/2 cup almond flour
1/4 cup cacao powder
1/2 tsp baking soda
1/4 tsp sea salt
1/3 cup coconut oil, melted
1/2 cup maple syrup
2 large eggs
1 tsp peppermint extract
1/3 cup dark chocolate chips
Instructions:
Preheat your oven to 350°F and line an 8x8-inch baking dish with parchment paper.
In a medium bowl, whisk together almond flour, cocoa powder, baking soda, and sea salt.
In another bowl, combine melted coconut oil, maple syrup, eggs, and peppermint extract.
Add the wet ingredients to the dry ingredients and stir until combined.
Fold in dark chocolate chips.
Pour the batter into the prepared dish and smooth the top.
Bake for 20-25 minutes or until a toothpick comes out clean.
Let cool before slicing. Enjoy with a drizzle of melted dark chocolate for extra decadence!
Soft & Chewy Gingerbread Cookies
Ingredients:
2 1/2 cups almond flour
1/4 cup coconut flour
1 tsp baking soda
1 tbsp ground ginger
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp sea salt
1/3 cup coconut oil, melted
1/3 cup maple syrup
2 tbsp molasses
1 tsp vanilla extract
Instructions:
Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, mix almond flour, coconut flour, baking soda, spices, and sea salt.
In another bowl, whisk together melted coconut oil, maple syrup, molasses, and vanilla extract.
Combine the wet and dry ingredients until a dough forms.
Roll the dough into small balls and place them on the baking sheet. Flatten slightly.
Bake for 8-10 minutes or until golden brown. Cool on the baking sheet before serving.

Maple Pecan Crusted Salmon
Ingredients:
4 salmon fillets
1/4 cup pecans, finely chopped
2 tbsp maple syrup
1 tbsp Dijon mustard
1/4 tsp sea salt
1/4 tsp black pepper
Instructions:
Preheat your oven to 375°F and line a baking sheet with parchment paper.
In a small bowl, mix chopped pecans, maple syrup, Dijon mustard, salt, and pepper.
Place the salmon fillets on the baking sheet and spread the pecan mixture evenly on top of each fillet.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
